This recipe for avocado butter—simply a blend of avocado, butter, and flavorings—is inspired by Dr. Annie Fenn of Brain Health Kitchen. Avocados are packed with 20 vitamins, minerals, and antioxidants, and promote brain, cardiovascular, and immune health. Annie serves this compound butter packed with healthy fat on top of grilled salmon to add richness, flavor, and extra nutrition.

We love to top all kinds of fish with two tablespoons of avocado butter and serve it with vegetables for a satisfying meal with a boost of enticing green color. It’s also delicious on poultry, and an especially wonderful way to add flavor to grilled, roasted, or steamed vegetables before serving (thanks to a generous dose of garlic and squeeze of fresh lemon juice). Make a large batch of avocado butter to enjoy over a few weeks—it will keep in the refrigerator for up to three days and can be frozen for three months.

Ingredients:

  • ¼ cup fresh flat-leaf parsley leaves
  • 1 large clove garlic
  • 2 tablespoons fresh lemon juice (about ½ lemon)
  • 1 medium ripe avocado, mashed
  • 2 tablespoons unsalted butter, at room temperature
  • Fine sea salt

Directions:

  1. Place the parsley, garlic, and lemon juice in the bowl of a food processor fitted with the S blade. Pulse a few times, about 7 pulses, until the parsley and garlic are finely chopped. Using a rubber spatula, scrape down the side of the bowl.
  2. Add the avocado, butter, and ¼ teaspoon salt. Process until smooth and creamy, about 1 minute. Refrigerate in an airtight container until ready to serve and up to 3 days.

Test Kitchen Tip:
Spread toast with a thin layer of avocado butter before adding mashed avocado and your favorite toppings for extra flavor and richness.
