With their miniature size and sweet flavor, mini peppers are perfect for snacking. They're crunchy, full of vitamins A and C, and sweeter than their bigger counterparts, the ordinary bell pepper. You'll find bags of these bright and colorful peppers near the baby carrots in the supermarket.

Mini sweet peppers star In this one-bite version of stuffed peppers. A simple combination of shredded chicken, pesto, Greek yogurt, red pepper flakes, and tomatoes are mixed together and added to hollowed-out mini peppers before they’re broiled to tender, melty perfection. The result is a protein-packed, poppable finger-food app or snack that’s great to bring to a potluck, serve at a party, or turn into a meal all on their own.

Ingredients:

  • 12 ounces sweet mini peppers (about 15)
  • 12 ounces cooked chicken meat, shredded (about 3 cups)
  • ½ cup homemade or store-bought pesto
  • ¼ cup plain whole Greek yogurt
  • ½ teaspoon crushed red pepper flakes
  • 10-12 cherry tomatoes, diced
  • 3 ounces fresh mozzarella, finely chopped

Directions:

  1. Preheat the broiler to high. Line a large rimmed baking sheet with parchment paper.
  2. Slice the peppers in half horizontally, then remove the seeds and ribs, leaving the stems intact. Set aside.
  3. Combine the shredded chicken, pesto, yogurt, red pepper flakes, and diced tomatoes in a large bowl. Spoon the chicken mixture into each pepper half and place on the prepared baking sheet.
  4. Sprinkle each pepper with mozzarella, then broil until the mozzarella is melted and beginning to brown, 1 to 2 minutes. Serve warm as an appetizer or snack.

Test Kitchen Tips:

You can assemble these stuffed peppers up to 2 days ahead of time and broil just before serving to save you time in the kitchen.

You can use pre-cooked rotisserie chicken, or you can roast or poach your own chicken breasts or thighs. Either way, use a hand mixer or a stand mixer to easily shred the boneless skinless chicken pieces in no time flat.

For an app or snack portion, we recommend 3-4 per serving (which packs in 10-12g of protein and lots of fiber). If you're looking to make these a meal, this recipe allows for you to have up to 10 of these at one serving. If you're following the Calibrate Food Triangle, that would pack in around 32g of protein, while still staying within our recommendations on cheese (a yellow-green ingredient).
