This bright and tangy one-pan meal comes together quickly and is packed with tons of protein and fresh, seasonal produce—perfect for a summer potluck or even just an easy weeknight dinner at home.

Feta and yogurt are whipped together to make a luscious and creamy sauce that’s high in protein and probiotics to help boost your immune system. Juicy, summer-fresh tomatoes are piled high on top for a boost of fiber. Then garlic, crushed coriander seeds, and protein-packed shrimp are sizzled in healthy fat-rich olive oil that’s infused with paprika for delicious flavor and a beautiful pop of color.

Make sure to use plain yogurt here for a savory taste, but go ahead and use whatever tomatoes you can find—a mix of sizes and colors makes the dish that much prettier! And feel free to remove the shrimp tails or leave them on—your call.

Ingredients:

  • 1 pound large peeled and deveined shrimp
  • 2 teaspoons hot paprika
  • Fine sea salt
  • ½ cup plain whole Greek yogurt
  • 4 ounces feta, roughly chopped
  • 2 pounds mixed tomatoes (such as heirloom, beefsteak, or cherry), sliced (or halved if small)
  • ¼ cup olive oil
  • 6 cloves garlic, thinly sliced
  • 2 tablespoons coriander seeds, lightly crushed
  • ½ cup fresh basil leaves, torn

Directions:

  1. Pat the shrimp dry with paper towels. Toss with the paprika and ½ teaspoon salt in a large bowl and set aside.
  2. Combine the yogurt, feta, and ¼ teaspoon salt in a small bowl. Spread the sauce on a platter and arrange the tomatoes over top.
  3. Heat the oil in a large nonstick skillet over medium-high heat. Stir in the garlic and the coriander seeds. Add the shrimp in an even layer and cook until the garlic is lightly brown around the edges and the shrimp are pink, about 2 to 3 minutes per side.
  4. Spoon the shrimp and the garlic-oil mixture over top of the tomatoes. Sprinkle with the basil and serve.

Test Kitchen Tip:

Coriander seeds are small and brown, with a warm, aromatic, and slightly citrusy flavor. Lightly crushing the seeds makes them easier to chew and helps release their flavor into the oil faster. Simply place them between a clean dish towel and using a rolling pin or the bottom of a heavy pot to gently crush them.
