Ingredients:

  • 1½ cups pitted Medjool dates (12-14)
  • ⅓ cup unsalted cashews
  • ¼ cup pumpkin seeds
  • ¼ teaspoon fine sea salt
  • ⅙ teaspoon ground cinnamon
  • 3 tablespoons tahini
  • 3 tablespoons toasted sesame seeds or ¼ cup unsweetened shredded coconut, beetroot power, or matcha powder, for coating (optional)

Directions:

  1. Place the dates, cashews, pumpkin seeds, salt, and cinnamon in a food processor fitted with the blade attachment and process until the dates and nuts are broken down and begin to clump together, about 1 minute. Add the tahini and process until incorporated, about 20 seconds more.
  2. Use two spoons, a small ice cream scoop, or your hands to portion the mixture into small 1-inch balls. Roll the balls in sesame seeds, coconut, beetroot powder, or matcha if desired. Refrigerate at least 1 hour and up to overnight before serving.

Test Kitchen Tips:

Double check your coconut to be sure it’s the unsweetened variety. Sweetened shredded coconut not only has added sugar and preservatives, it has more moisture as well, which can affect the texture of your end result.

Budget Tip: Buy nuts from the bulk section of your supermarket and store them in an airtight container in the freezer to extend their shelf life. Most nuts can last up to six months in the fridge or up to a year in the freezer.
